Stuffed Chicken Breast

I think I need some smaller plates...

This is possibly my favorite Tony Ferguson recipe, I have cooked it about five times now. Like last nights stuffed pork it is really simple to make – mix, stuff, sear, bake – that’s all there is to it. This was the first time however that I have made the accompanying salad, and that was where I had issues. Firstly, I explored three supermarkets, a grocer and the David Jones foodhall before I finally found Sherry Vinegar. I actually had to look it up on Wikipedia as I have never heard of it before. When I found it at DJ’s there were two types, one was $34.99 and the other was $13.99. I went with the cheap one, it’s already vinegar right?

My other struggle with the salad ingredients is that I couldn’t find fresh Tarragon anywhere, so I ended up skipping that bit all together. The salad was ok, it’s not really my thing, especially with raw onion, but at least I have tried it 🙂

As usual the chicken turned out great, the only thing I find with the chicken recipe is that it’s a bit bland, not sure what to do about that, and I don’t really mind all that much.
